Chayote Squash Soup with Shrimp

If you still don't know how to make a vegetable soup, this recipe of Chayote squash soup with shrimp you will make you a professional in the kitchen. Accompanied with lemon and a few leaves of coriander, it's perfect for your weekly menu and enjoy it with your family. Don't forget to add the shrimp at the end.

Ingredients

4 servings
  • 2 cups of chayote squash peeled and cut into in medium cubes
  • 4 cups of Water
  • 2 cups of Vegetables soup
  • 1 piece of cambray onion with stalk chopped into slices, include stem
  • 1 Cup of saladette tomatoes seedless, chopped into cubes
  • 1 tablespoon of vegetable oil
  • enough of Salt
  • enough of black pepper
  • 1 Cup of chayote squash cooked and diced
  • 1 1/2 cups of shrimp cleansed
  • 2 spoonfuls of coriander
  • enough of coriander leaf to decorate
  • enough of green lemon for serving

    Preparation

    Heat the water over medium heat, add the chayote squash and salt, and cook for 30 minutes or until they are done.
    Blend the chayote squash with the vegetable stock, the chambray onion and tomato. Set aside.
    In a saucepan, heat the oil over medium heat and pour the soup. Season with salt and pepper.
    Add the chayote squash, cook for 10 minutes, add the shrimp and cook for 3 more minutes.
    Serve hot, accompanied by a refreshing drink.

    PRESENTATION

    Serve the soup in a large bowl and garnish with coriander leaves.

    TIPS

    It is important to add the shrimp at the end so you don't overcook them and prevent from getting rubbery or dry. You can substitute the chambray onion with white onion.
