This is a rich soup with very Mexican ingredients, it is a version of my grandmother's called Milpa Soup. It is also super nutritious and perfect for those cold winter evenings.

Ingredients

4 servings
  • 5 pumpkins in cubes
  • 300 grams of mushroom
  • 2 1/2 cups of corn kernels Cooked
  • 2 bouquets of squash blossom
  • 3 liters of chicken consommé
  • 2 dried peppers
  • Salt
  • 2 branches of epazote
  • avocados
  • Corn tortillas cut into strips and fried

    Preparation

    For the chicken consommé, preferably buy 1 kilo of chicken remnant and boil it with salt, garlic and onion. While the broth is on the fire, chop the pumpkins into cubes. The mushrooms, clean, cut into 4 or 6 parts depending on the size, corn kernels are steamed (put in a container with little water and cover, cook over low heat until they are cooked, without letting the water consume the whole, clean the pumpkin flower, and make it in long strips.
    When the chicken broth is ready (well when the chicken is well cooked) the pumpkins and mushrooms are egregar, let boil for 15 minutes and add the corn, the epazote (you can add less of it if the flavor does not it pleases a lot)
    After 5 minutes, the flavor is rectified, the washed chipotle is added (only one if you do not want very hot or two if you want it with more itching) and the pumpkin flower, 5 more minutes of cooking and it is removed from the fire.

    PRESENTATION

    Serve in bowls of mud and garnish with the avocado in cubes and a small handful of tortilla strips. And to enjoy!!

    TIPS

    You can enrich your soup with a bit of long pasta and substitute dried chipotle chile with ground guajillo chile with garlic and salt. It changes the flavor but it will not be as spicy as with the chipotle. You can also add shredded chicken, but that depends
