Layers of lasagna pasta stuffed with eggplant with mushrooms, spinach and marinara sauce. The secret of this recipe is the ricotta vegan type cheese. Absolutely delicious!

Ingredients

12 servings
  • 12 pieces of pasta for lasagna integral
  • 1 tablespoon of olive oil
  • 1 piece of pumpkin medium, diced
  • 1 Cup of pea Cooked
  • 250 grams of mushroom sliced
  • 500 grams of spinach washed and disinfected
  • 5 cups of marinara sauce
  • 300 grams of tofu , for tofu ricotta
  • 250 grams of hummus of garlic, for tofu ricotta
  • 1/4 of Cup of fresh basil leaf for tofu ricotta
  • 1 pinch of Salt for tofu ricotta
  • 1 pinch of garlic powder for tofu ricotta

    Preparation

    Preheat the oven to 180 ° C.
    In a pot heat the water and cook the lasagna pasta until al dente, drain and cool with cold water to stop cooking.
    Heat the oil in a pan add the pumpkin with the mushrooms and season with salt and pepper. Add the peas, spinach and sauté for 5 more minutes.
    Place the tofu in a bowl and crumble with a fork, add the hummus, the yeast, the basil, the salt and the garlic powder; mix until integrated and resemble a ricotta cheese.
    In a refractory place a little of the marinara sauce, a layer of lasagna pasta, a bit of the ricotta mixture and the vegetable mixture. Repeat the procedure until the ingredients are finished.
    Cover with aluminum foil and bake for 30 minutes.

    Hola con todo respeto Lily, la receta tiene errores, en que momento se usa la berenjena??? porque el titulo dice lasaña fácil de berenjena, y luego levadura??? cual levadura , si en los ingredientes no esta. y la salsa marinera, asi se pide? o como se elabora? En mi opinión esta mal esta receta o esta equivocada.
