Baked Potato with Mushrooms

What other garnish could be richer tasting than a crunchy potato? Prepare this recipe for Baked Potatoes with Mushrooms and give that incredible twist to the traditional way of eating baked potatoes. Try adding a considerable amount of cheese so that it melts well and covers most of the potato.

Ingredients

3 portions
  • 3 white potatoes, medium
  • 2 tablespoons butter
  • enough salt and pepper
  • 1 cup bacon, finely chopped
  • 1/4 cups onion, finely chopped
  • 1 1/2 cups mushroom, filleted
  • 2 cups spinach, cut into strips
  • 1/2 cups manchego cheese, grated
  • enough chinese parsley, to decorate

Preparation

Preheat the oven to 180 °C 180°C = (357 °F)
Place a little butter on the foil paper, arrange the potatoes and season with salt and pepper, wrap.
Place the potatoes in a cast iron pan or baking tray and bake for 40 minutes.
For the filling, in a pan over medium heat cook the bacon until it browns, add the onion, the mushrooms and cook until they release their juice, add the spinach, season and cook 2 more minutes.
Cut the top of the potatoes and make hallow out the center with a spoon. Fill them with the mushroom and spinach mixture and arrange them again on a baking sheet.
Sprinkle potatoes with grated cheese and bake again until melted. Serve and enjoy.

PRESENTATION

In a frying pan and cast iron, accompanied by a refreshing drink.

TIPS

You can use the filling of the potatoes to make a rich mashed potato.
