The romeritos recipe that you will find here is delicious, it is a homemade recipe, just as if your grandmother prepared it. It is a traditional, simple and delicious preparation. The shrimp pancakes are exquisite, especially in the company of the romeritos.

Ingredients

6 portions
  • 1 kilo romeritos
  • 6 grams salt
  • 6 nopales
  • 12 guajillo chilies
  • 3 ancho chili peppers
  • 2 cloves garlic
  • 2 tomatoes
  • 1 onion, roast
  • 100 grams lard
  • 500 grams potato cambray, cooked
  • 150 grams Dry shrimp
  • 250 grams shrimp, shoddy
  • 2 eggs, for the pancakes
  • 100 grams Dry shrimp, ground
  • 10 grams ground bread
  • 150 milliliters vegetal oil

Preparation

Clean the romeritos with enough water, seeking to remove the dirt that they commonly bring. Cook them in a pot with enough water (that it covers the romeritos) and salt. Once cooked (they change color), drain and reserve.
Cut the nopales into cubes, cook them in a pot with enough water and salt for 10 minutes. Once cooked, drain them.
For the sauce: remove the veins and seeds, roast the chiles on both sides on a comal over high heat, try not to burn so that the sauce does not make the sauce bitter, soak them in hot water until they are soft.
Roast the garlic with the tomato and onion on a comal over high heat. Move them constantly until the skin is burned.
Blend the chili peppers with the garlic, tomato, onion and a little water, make sure the sauce is well ground.
Heat the butter and fry the sauce for 10 minutes, add the romeritos, the nopales, the potatoes (previously cooked) and the shrimp (fresh and dry). Season.
For the pancakes, beat the whites to the point of nougat, add the yolks, the shrimp powder and the ground bread.
Form the pancakes and fry in hot oil until golden brown on both sides. Drain on absorbent paper to remove excess fat and incorporate the pancakes in the preparation. It serves.

PRESENTATION

Enjoy your romeritos with some warm tortillas or bread.

TIPS

Roast the garlic with the skin so it does not burn and make the sauce bitter. Before adding the dried shrimp to the sauce, remove the eyes.

Receta totalmente diferente como la que hace mi abuela. Su exquisito mole almendrado, chocolate abuelita, delicia. Pobrate estos para dar visto bueno.

Los tradicionales sin duda son con un buen mole, este parece un caldillo para albóndigas. Puede ser una buena versión pero no tradicionales para nada
