For this tip you need the following ingredients: • 300g beef tenderloin of the best quality (sirloin or Sirloin) • 2 tablespoons of capers drained. • 2 tablespoons of Dijon mustard • 1 tablespoon of lemon • ¼ cup of finely chopped marinated red onion • 2 tablespoons finely chopped parsley • 1 egg yolk • English sauce • Salt and pepper • ¼ cup of olive oil
First, freeze the meat briefly to make it easier to handle. Using a very sharp knife, cut it into small cubes (about ½ cm). Transfer it to a container and put it in the fridge.
In another container, mix the yolk, lemon, mustard, English sauce and salt and pepper to taste. Add the olive oil little by little to form a dressing.
Add the dressing to the meat along with the capers, the onion and the parsley.
Mix carefully and season with salt and pepper to taste.
Serve immediately with slices of toasted thin bread.
