Potosinas Enchiladas are made with a dough prepared with red chili that gives them their color.
They are filled with a mixture of fresh cheese with chili and onion.
They are served with fresh cream, shredded lettuce, and guacamole.

Ingredients
75 Grams of Dried ancho chiles, deveined and seedless
1 Cup of Hot water
1 Tablespoon of Butter
1 Tablespoon of Oil
1/4 Cup of Finely chopped onion
1 1/4 Cups of Crumbled fresh cheese
1/2 Kilo of Corn dough
1/2 Teaspoon of Salt
