At the festival's presentation, Pablo San Román, chef of the restaurants Ekilore and Ajo Blanco, expressed his honor in collaborating with a benchmark of Spanish cuisine in Mexico City. “Grupo Castellano is a story. All of us who own restaurants, without exception, would like to reach 60 years. To go through crises and pandemics and come out ahead.
