Coffee Atole

  • 4 tablespoons cornstarch
  • 1 liter whole milk
  • 1 cup evaporated milk
  • 1 cinnamon stick
  • 1 piloncillo
  • 4 tablespoons instant coffee

  • Hydrate the cornstarch with a little of the milk and set aside.
  • Heat the whole milk, evaporated milk, cinnamon stick, piloncillo, and instant coffee in a pot. Cook over medium heat for 10 minutes.
  • Add the hydrated cornstarch and cook the atole for 10 more minutes or until it thickens.
  • Serve the hot coffee atole and enjoy.
