4 tablespoons cornstarch
1 liter whole milk
1 cup evaporated milk
1 cinnamon stick
1 piloncillo
4 tablespoons instant coffee

Hydrate the cornstarch with a little of the milk and set aside.
Heat the whole milk, evaporated milk, cinnamon stick, piloncillo, and instant coffee in a pot. Cook over medium heat for 10 minutes.
Add the hydrated cornstarch and cook the atole for 10 more minutes or until it thickens.
Serve the hot coffee atole and enjoy.
