Guava Atole

If you like atole for this season when the cold begins, I recommend this delicious guava atole with cinnamon, star anise, sweetened with piloncillo; very traditional.   • 4 cups water
  • 1 kilo guava
  • 1 stick cinnamon
  • 1 star anise pod
  • 1 piloncillo, 200 g, cut into pieces
  • 6 tablespoons cornstarch, dissolved in a little milk
  • 4 cups cow's milk

  • Heat water in a small pot, add guavas, cinnamon, star anise, and piloncillo. Cook until the guava is soft and the spices release their aroma. Remove from heat, let cool, and set aside.
  • Blend the previous mixture in the T-fal® InfinyForce blender using the blend function, then strain.
  • Return the mixture to the pot, add the cornstarch dissolved in milk, and cook for 20 minutes over medium heat starting when it begins to boil, stirring occasionally.
