Cinnamon Atole

Atole is a very cherished drink in Mexico and is so versatile that it can be combined with countless flavors, and many times, it can be a simple version, like this cinnamon atole recipe. To infuse the cinnamon for a longer time, boil the milk over medium heat and maintain a medium to low temperature. This is a thick drink and very good to start the day, accompanied by your favorite breakfast dish.

  • 3 tablespoons cornstarch
  • cow's milk
  • 4 cups evaporated milk
  • 3/4 cups raw sugar
  • 3 sticks cinnamon
  • cinnamon powder, for decoration

  • Dissolve the cornstarch in a little milk.
  • Heat evaporated milk in a pot over medium heat, add the brown sugar and cinnamon sticks; add the dissolved cornstarch in the milk and let it thicken for about 5 minutes.
  • Serve, decorate with ground cinnamon, and enjoy!
