Guava and Rice Atole

Atole, in addition to being a complete and nutritious drink, is an excellent option for breakfast. With this recipe, you will learn to prepare it with rice flour and fruit in a very easy and simple way. Pair it with some delicious green tamales or your favorite breakfast, and as a tip, we recommend using a little baking soda to help neutralize the acidity of the guava and prevent the milk from curdling.

  • 5 guavas, cut in halves
  • 2 cups water
  • 1 cinnamon stick
  • 2 cups cow's milk
  • 1 teaspoon baking soda
  • 1 cup condensed milk
  • 1/4 cups rice flour
  • cinnamon powder, for decoration

  • Heat the water and cook the guavas. Blend and set aside.
  • Heat the milk with the cinnamon stick, condensed milk, and baking soda.
  • Using a strainer, add the guava, rice flour, and cook over medium heat until it thickens slightly.
  • Serve very hot in a cup, sprinkled with ground cinnamon.
