2 tablespoons granulated sugar, for the pumpkin syrup
1/2 teaspoons nutmeg, for the pumpkin syrup
1/2 teaspoons cinnamon powder, for the pumpkin syrup
1 cup water, for the pumpkin syrup
1/2 cups sugar, for the vanilla syrup
1/2 cups water, for the vanilla syrup
1 sprig vanilla essence, for the vanilla syrup
chantilly cream, to taste
1 teaspoon cinnamon powder
1/2 teaspoons nutmeg
1/2 teaspoons ginger powder
1/4 teaspoons ground pepper

For the vanilla syrup, place the ingredients in a saucepan and stir constantly until the sugar dissolves. Remove the syrup from the heat and let it cool completely; store the syrup in a sealed jar for up to 1 month.
Prepare the pumpkin syrup by placing all the ingredients in a saucepan over medium heat. Stir constantly until the mixture thickens slightly. Strain the syrup to remove the pumpkin pulp, let it cool, and store in a sealed jar for up to 2 weeks.
Add 1 tsp of the vanilla syrup to the Santa Clara® Whole Milk and 1 ½ tbsp of the pumpkin syrup.
Heat the Santa Clara® Whole Milk in the microwave for 1 minute. Pour the milk over 2 shots of espresso. Add the whipped cream and sprinkle the spice mix on top (cinnamon, nutmeg, ginger, pepper).
