This agua loca is made based on an infusion of hibiscus flower and some spices that give it a spectacular flavor; enjoy it very cold with mezcal; together these flavors create an incredible combination.
Heat the water along with the hibiscus flower, cinnamon, star anise, and sugar in a pot. When it starts to boil, let it cook for 2 more minutes, remove from heat and let it cool completely.
Once the hibiscus infusion is well chilled, serve it in a jar or pitcher with plenty of ice, then add mezcal and mix well.
You can leave some hibiscus flowers for serving and enjoy the agua loca de jamaica with mezcal very cold.
