For those hot days, nothing like a delicious pitahaya, mint, and yellow lemon water. The flavor of the pitahaya pairs well with the sweetness of the yellow lemon. Try this delicious drink served very cold.

1/2 cups lemon juice

2 lemons, sliced very thin
peppermint, to taste
