  • 2 cups water
  • 1 cup whole milk
  • 1 cup sugar
  • 1 tablespoon cinnamon powder
  • 1 teaspoon ground ginger
  • 1 teaspoon nutmeg
  • 1 teaspoon black pepper
  • 1 cup pumpkin purée
  • 2 cups water
  • cinnamon powder

  • Place the rice in a bowl, cover with water, and let it rest for 3 hours.
  • Blend the rice with whole milk, sugar, cinnamon, ginger, nutmeg, pepper, and pumpkin puree for 5 minutes or until you obtain a smooth mixture.
  • Pour the horchata into a pitcher with ice, add water, and mix.
  • Serve the pumpkin spice horchata in a glass with ice and garnish with ground cinnamon.
