Tejate

An exquisite drink, you can have it as a dessert; it's a delicious Oaxacan beverage made from corn, cocoa, and mamey.

  • 1/2 kilos corn
  • 70 grams cocoa  70 grams cocoa
  • 3 mameyes, (pits)
  •  sugar  , to taste sugar , to taste

  • Cook the corn with ash lye.
  • Once cooked, wash the corn well to remove the husk until it is completely white and ground very well.
  • Roast the mamey pits, crush and toast them.
  • Toast the cocoa and clean it.
  • Grind the 3 ingredients together with the dough.
  • Whip in cold, sweetened water; it should not be watery.
