Put the chopped peaches in a blender, add the sugar and water, and make a puree. Place in the refrigerator to chill until the sugar dissolves and it is well cold.
Put a little extra sugar on a plate and rim the champagne glasses with sugar, first dipping them in a bit of water so the sugar sticks.
Add a tablespoon of peach puree to each glass and fill with chilled Prosecco or champagne.
