Peach Bellini

This delicious champagne cocktail features a peach puree that gives it an exquisite flavor. It's perfect for welcoming 2012!

  • 6 peaches, ripe peaches, halved and pitted
  • 1 bottle prosecco, well-chilled champagne
  • 1/4 cups sugar
  • 1/4 cups water

  • Put the chopped peaches in a blender, add the sugar and water, and make a puree. Place in the refrigerator to chill until the sugar dissolves and it is well cold.
  • Put a little extra sugar on a plate and rim the champagne glasses with sugar, first dipping them in a bit of water so the sugar sticks.
  • Add a tablespoon of peach puree to each glass and fill with chilled Prosecco or champagne.
  • Enjoy!
