Pineapple Martini with Tree Chili

The martini is an excellent aperitif that is greatly enjoyed during long conversations. Try this spicy martini version with pineapple and Domino® Mascabado Sugar, which perfectly combines the dryness of vermouth and the sweetness of vodka.

  • 1 cup pineapple, without skin, cut into cubes
  • 2 árbol chiles, without stem, without veins or seeds, hydrated in hot water (soaked)
  • 1/2 cups orange juice, strained, without seeds
  • ice cubes
  • 3 tablespoons lime juice, strained, without seeds
  • 2 ounces dry vermouth
  • 2 ounces vodka
  • 3 tablespoons Domino® raw sugar
  • 1 1/2 tablespoons chile flakes, to rim
  • 2 tablespoons salt, to rim
  • 3 tablespoons Domino® raw sugar, to rim
  • 1 lime, sliced, for rimming
  • pineapple, in triangle, for decoration

  • Blend the pineapple with the previously hydrated tree chili and orange juice until fully integrated.
  • In a wide glass, pour in the ice along with ¼ cup of the previous mixture, lemon juice, dry vermouth, and vodka, add the Domino® Mascabado Sugar, and mix with a spoon. Set aside to chill.
  • On a plate, mix the chili flakes with salt and Domino® Mascabado Sugar.
  • To rim the glass, place the edge of a martini glass over the lemon slices until the surface is sufficiently damp. Then, dip the rim of the glass into the mixture of chili, salt, and mascabado sugar until fully coated. Pour the cocktail into the rimmed glass, garnish with a triangle of pineapple, and you’re done!
