Rice Atole

A Mexican drink served hot, made with nuts and flour.

  • 3 tablespoons rice flour
  • 3 cups water
  • 2 cups cow's milk
  • 1 tablespoon almond extract
  • 1 tablespoon walnuts, toasted in pieces

  • Dissolve the flour in cold water and mix it with the rest of the water, stirring constantly to avoid lumps.
  • Boil gently for 20 minutes, and once it is well cooked, add the milk and sugar, and let it boil for 10 more minutes.
  • Remove from heat and add the almond extract.
  • Add the pieces of toasted walnut.
