1 cup Domino® raw sugar, for the syrup
1 cup water, for the syrup
1 sprig rosemary, for the syrup
1 cup apple, in cubes
1 cup pear, in cubes
1 cup grapes, halfway
1 cup melon, in cubes
1/2 cups Mezcal
1/2 cups lime juice
1/2 cups orange juice
150 milliliters sparkling water
1 bottle red wine, 750 ml

For the syrup: Heat the Domino® Mascabado Sugar with water and rosemary in a pot over medium heat for 15 minutes. Let cool.
Place the apple, pear, grapes, and melon in a pitcher, then pour in the syrup, mezcal, lemon juice, and orange juice.
Refrigerate for 15 minutes.
Now add the sparkling water and the bottle of wine, and finally, stir very well with a ballerina.
Let the clericot with mezcal rest for 20 minutes.
Serve the clericot with mezcal in a glass and enjoy.
