Clericot with Mezcal

  • 1 cup Domino® raw sugar, for the syrup
  • 1 cup water, for the syrup
  • 1 sprig rosemary, for the syrup
  • 1 cup apple, in cubes
  • 1 cup pear, in cubes
  • 1 cup grapes, halfway
  • 1 cup melon, in cubes
  • 1/2 cups Mezcal
  • 1/2 cups lime juice
  • 1/2 cups orange juice
  • 150 milliliters sparkling water
  • 1 bottle red wine, 750 ml

  • For the syrup: Heat the Domino® Mascabado Sugar with water and rosemary in a pot over medium heat for 15 minutes. Let cool.
  • Place the apple, pear, grapes, and melon in a pitcher, then pour in the syrup, mezcal, lemon juice, and orange juice.
  • Refrigerate for 15 minutes.
  • Now add the sparkling water and the bottle of wine, and finally, stir very well with a ballerina.
  • Let the clericot with mezcal rest for 20 minutes.
  • Serve the clericot with mezcal in a glass and enjoy.
