Almond Croissants

  • 1/2 cups almond flour

  • Mix Honey Bunches of Oats® almond cereal with almond flour, powdered sugar, egg yolks, and vanilla extract in a bowl, then use a spatula and stir until a homogeneous dough forms. Refrigerate for 20 minutes.
  • Sprinkle flour over a flat surface, roll out the dough to half a centimeter thick with the help of a rolling pin, and form a rectangle. Divide the dough in half and shape triangles of the same size. Take one of the triangles and stretch it slightly with the rolling pin.
  • Place a tablespoon of the Honey Bunches of Oats® almond mixture at the widest part of the triangles and roll from the widest part to the tip of the triangle to make the croissants. Finally, seal the corners by sticking them one by one.
  • Place the croissants on a tray lined with parchment paper, brush each one with egg, sprinkle with Honey Bunches of Oats® almond cereal, and bake at 175 °C for 50 minutes.
  • Serve the almond croissants on a large plate or board and accompany with milk.
