In the bread machine pan, pour the water first, then the flour, and then the salt. Make a hole in the middle of the flour down to the water and place the yeast there.
Place the pan in the machine, cover it, and select the French dough setting. The process takes about 3 hours; the machine will only make the dough rise, it will not bake it.
Remove the dough from the machine and place it on a clean surface with a little flour. Work the dough and divide it into 2 parts. Make a ball with each part and stretch the balls to form rectangles in the shape of a baguette.
In flour two kitchen towels and place the two baguettes separately inside, cover them with oiled plastic wrap and let them rest for 30-40 minutes.
Preheat the oven to 230 degrees Celsius. Place the baguettes on a baking sheet greased with a little oil. Make sure they are well separated from each other.
With a knife, make cross cuts on the top. Bake for 15-20 minutes or until golden and crispy.
