  • 1 can beans, whole
  • 1 can ear corn, golden, small
  • 4 tostadas, (preferably baked)
  • 3 eggs
  • 1/2 cups extra virgin olive oil
  • 2 tablespoons fresh cilantro
  • 6 leaves basil, sanitized
  • 1/2 cups Manchego cheese
  • 1/2 teaspoons garlic
  • 1 teaspoon chicken bullion
  • 1 cup water

  • Preheat the oven to 250°C.
  • Place the corn and beans in a strainer, drain them, rinse under running water, and put them in the blender.
  • Add all the other ingredients and blend until a smooth, lump-free mixture is obtained.
  • Grease a mold, line it with parchment paper, and pour in the mixture.
  • Bake for 45 minutes or until the center of the cake is cooked; you can check this by inserting a toothpick; if it comes out clean, the cake is done.
