Brazilian Cheese Bread

This bread is known as Pão de Queijo in Brazil, and its magic lies in the dough, which already incorporates manchego and parmesan cheese. It's a true delight!

  • 1/2 cups cow's milk
  • 1 cup cornstarch
  • 1 1/2 cups cassava flour, (tapioca flour/yuca)
  • 1/2 cups butter
  • 1/2 cups water, boiling
  • 1 egg
  • 2 cups Mozzarella cheese
  • 1/2 cups Parmesan cheese
  • 1 tablespoon baking powder

  • Preheat the oven to 200 degrees Celsius.
  • Mix in a deep bowl the cornstarch, tapioca flour/yuca, and baking powder. Add the milk, water, and melted butter. Mix well.
  • Add the salt, cheese, egg, and mix until you obtain a dough.
  • Knead with your hands and form small balls.
  • Place the balls on a baking sheet previously greased with cooking spray or a bit of butter and bake until they start to brown. Remove from the oven.
