Choux Pastry

Choux pastry is ideal for serving canapés; you can fill it with avocado mousse or seafood. The presentation looks super elegant.

  • 250 milliliters water
  • 4 eggs, It can be 5; you need to check the consistency.
  • 75 grams butter
  • 125 grams flour

  • Melt the butter with the water in a saucepan.
  • Add the flour all at once and stir to cook the flour.
  • A small ball should form.
  • Off the heat, add the eggs one by one (you may not need the fifth whole egg, just half or a splash; you'll know when you see the consistency). At first, it may seem like the dough is separating, but after mixing well with a wooden spatula, it will start to come together. The consistency should be such that when you lift the spatula, the dough falls off in large pieces like ribbons.
  • Put in a piping bag and make small balls (like medium meringues) on a baking sheet lined with parchment paper.
  • Brush with egg.
  • Bake at 180ºC for approximately 20 minutes until they look golden brown.
