Cinnamon Braid

  • 60 milliliters cow's milk
  • 10 grams dry yeast, for the dough
  • 375 grams flour, for the dough
  • 60 grams sugar, for the dough
  • 9 grams salt, for the dough
  • 3 eggs, for the dough
  • 150 grams butter, for the filling
  • 1/2 cups butter, for the filling
  • 1/4 cups raw sugar, for the filling
  • 2 tablespoons cinnamon, for the filling
  • 1 cup pecans, finely chopped
  • 1 cup flour, to spread
  • egg yolk, for brushing
  • icing sugar, for decorating

  • Preheat the oven to 170°C.
  • Hydrate the yeast with the milk, let it rest for 10 minutes, and set aside.
  • In a mixer, combine the flour with the sugar, salt, eggs, milk with the hydrated yeast, and knead until you have a homogeneous dough.
  • Add the butter gradually while continuing to beat until fully incorporated and an elastic dough is obtained. Place in a previously floured and greased bowl and let it rise for 4 hours in the refrigerator, or until it doubles in volume.
  • For the filling, mix the butter with the brown sugar and cinnamon.
  • On a floured surface, use a rolling pin to roll out the dough until it is 3 mm thick, add the filling, the nuts, roll it up, and cut it in half horizontally.
  • Form a braid with the two rolls of dough and place in a previously greased and floured bundt pan, brush with egg yolk, let rise for 15 minutes, and bake for 30 minutes or until golden. Cool
  • Decorate with powdered sugar.
