  • 9 grams dry yeast, for the dough
  • 3/4 cups cow's milk, warm, for the dough
  • 2 3/4 cups flour, for the dough
  • 1/4 cups sugar, for the dough
  • 1 teaspoon salt, for the dough
  • 1 egg, for the dough
  • 2 tablespoons butter, melted, for the dough
  • 1 cup raw sugar, for the filling
  • 1 cup butter, at room temperature, for the filling
  • 2 tablespoons cinnamon, for the filling
  • 1/2 cups walnuts, for the filling
  • 1 cup icing sugar, for the glaze
  • 2 tablespoons cow's milk, for the glaze
  • 1 egg, for brushing

  • For the dough, mix the yeast with the milk and let it rest for 10 minutes to hydrate.
  • In a mixing bowl, add the flour, sugar, egg, salt, the milk with yeast, and beat until you have a homogeneous consistency.
  • Add the butter and continue kneading until integrated. Place in a previously greased bowl and let it ferment for an hour or until it doubles in volume.
  • Preheat the oven to 180°C.
  • For the filling, mix brown sugar with butter and cinnamon.
  • On a floured surface, roll out the dough with a rolling pin, add the filling, walnuts, and roll up. Using a knife, cut the rolls into 2cm thick pieces.
  • Place the rolls on a baking dish, folding the end of the roll down to maintain shape. Let it ferment for another 20 minutes.
  • Brush with egg and bake the rolls for 20 minutes. Cool.
  • For the glaze, mix powdered sugar with milk, pour over the cinnamon rolls, and decorate with walnuts.
  • Serve accompanied by a glass of milk.
