Cinnamon Rolls with Blueberries and Walnuts

  • 3 San Juan® eggs
  • 3/4 tablespoons dry yeast
  • 2 tablespoons water, warm
  • 4 cups wheat flour
  • 1/2 cups granulated sugar
  • 1 teaspoon salt
  • 1/2 cups whole milk
  • 2 tablespoons butter, at room temperature
  • 3 sticks butter
  • 1/2 cups walnuts, chopped
  • 1/2 cups cranberries

  • Preheat the oven to 180 °C.
  • Hydrate the yeast in warm water and let it rest for 10 minutes.
  • In a mixer, add the flour, sugar, salt, milk, San Juan® eggs, add the hydrated yeast, and knead until completely combined to form a dough.
  • Add the butter and continue kneading until fully integrated
  • In a greased bowl, place the dough and cover. Let it rest for 30 minutes in refrigeration
  • Place the butter in non-stick plastic, place another on top and using a rolling pin, roll out until you get a rectangle of 20 cm long by 15 cm wide, refrigerate.
  • Roll out the dough and place the butter square, fold like an empanada and seal.
  • Roll out vertically until you achieve a thickness of 4 mm, fold 1/3 of the dough and fold again to form a rectangle. Freeze for 10 minutes.
  • Repeat the same process 1 more time and freeze for 10 minutes.
  • Let the dough rest for 4 hours in refrigeration until it doubles in volume.
  • Roll out the dough and brush with San Juan® egg, add the walnuts, blueberries, and cinnamon
  • Roll from one end to the other and cut approximately 2 cm thick.
  • Place on a baking sheet and brush with egg.
  • Bake for 20 minutes.
