  • Preheat the oven to 180°C.
  • In a bowl, combine the flour, pancake mix, oil, sugar, milk, and 4 eggs.
  • Whisk all the ingredients together and add the baking powder and vanilla while continuing to whisk; it should result in a smooth mixture.
  • Pour the mixture into the molds halfway and place pieces of cream cheese in each mold.
  • Bake for 17 to 20 minutes and insert a knife to check if they are done; if it comes out stained, leave it for 5 more minutes and turn off the oven even if it’s not fully cooked, as you can use the residual heat inside the oven, but if this is the case, watch the cupcakes to avoid burning.
  • Remove the cupcakes from the oven and decorate.
