Easy Brazilian Cheese Bread

Cheese bread is typical of Brazilian cuisine and is made from cassava flour or manioc and meia cura cheese, which is semi-cured, originating from a town called Minas Gerais. This cheese can be replaced with Gruyère or Parmesan cheese. This delicious bread from Brazil has a very soft, moist, and slightly dense texture, so it should be consumed while still hot, as it hardens when cold. Try it, you will love it!

  • 2 eggs
  • 1/2 cups vegetable oil
  • 1 cup milk
  • 550 grams cassava flour
  • 1 tablespoon salt
  • 1 teaspoon white pepper
  • 250 grams Gruyère cheese
  • 100 grams Parmesan cheese
  • Parmesan cheese, for decoration

  • Heat the milk and oil in a pot over medium heat for 3 minutes; it doesn’t need to boil, just be very hot.
  • Mix in a large bowl the cassava flour with salt and white pepper using a wooden spoon; gradually add the heated milk and oil and mix with the spoon, allowing the flour to absorb the liquid.
  • Add the cheeses and mix again; add the eggs one at a time and mix until you have a homogeneous dough. Refrigerate for 15 minutes.
  • Preheat the oven to 180 °C.
  • Grease your hands with a little oil and form dough balls of approximately 40 grams; place them spaced (about 4 cm apart) on a baking sheet lined with parchment paper and sprinkle with Parmesan cheese.
  • Bake for 25 minutes and consume while still hot out of the oven.
