Brazilian Cheese Bread

Cheese bread, known as pan de queijo, is a traditional Brazilian dish. Made with yuca flour and queso de meia cura that comes from Minas Gerais, Brazilian cheese bread can also be made with Gruyère or Parmesan cheese. Besides being delicious, Brazilian cheese bread has a soft, moist, and a bit heavy texture that is best enjoyed right out of the oven.

  • 2 eggs
  • 1/2 cups vegetable oil
  • 1 cup milk
  • 550 grams cassava flour
  • 1 tablespoon salt
  • 1 teaspoon white pepper
  • 250 grams Gruyère cheese
  • 100 grams Parmesan cheese
  • Parmesan cheese, for garnish

  • For the dough: In a pot over medium heat heat milk and oil for 3 minutes. Milk must be hot, not boiling hot.
  • Using a wooden spoon mix yuca flour, salt, and white pepper in a large bowl. Add hot milk and oil little by little and stir with the spoon. Flour must absorb the liquid.
  • Add cheeses and mix again. Add eggs, one at a time, and mix until a homogenous mixture is obtained. Refrigerate for 15 minutes.
  • Preheat oven to 356 °F.
  • For the Brazilian cheese bread: Grease your hands with a bit of oil and make dough balls of about 1.4 ounces. Place them on a tray with wax paper leaving about an inch between each ball. Sprinkle with Parmesan cheese.
  • Bake for 25 minutes. Serve Brazilian cheese bread right out of the oven.
