1/2 cups butter, at room temperature, for the mixture
1/4 cups sugar, for the mixture
2 eggs, for the mixture
3/4 cups milk, for the mixture
1/4 cups vegetable oil, for the mixture
1 teaspoon vanilla essence, for the mixture
2 1/4 cups Tres Estrellas® flour for hot cakes, for the mixture
1 tablespoon corn starch Tres Estrellas®, for the mixture
1 cup apricot jam, for decoration
1 tablespoon water, to dissolve the jam
white nonpareil sprinkles, for decoration

Cream the butter in a bowl using a spatula, add the sugar and mix until you achieve a smooth and fluffy consistency. Add the eggs one at a time and, using a whisk, beat until fully incorporated. Pour in the milk, the oil in a steady stream, and the vanilla extract.
Add the Tres Estrellas® Pancake Mix and the Tres Estrellas® cornstarch and mix until fully combined. Set aside.
Place the mixture in a previously greased and floured mold until it fills ¾ of its capacity. Bake at 180 °C for approximately 40 minutes. Remove from the oven, cool, and unmold.
Place the cupcake on a board and remove the top part to form the Garibaldi.
Add the jam and water in a bowl and mix until perfectly dissolved. Set aside.
Brush the Garibaldis with apricot jam using a brush and roll them in white sprinkles until the cupcake is completely covered. Enjoy with a glass of cold milk!
