  • 5 cups flour, 600 grams
  • 5 tablespoons dry yeast, 5 grams
  • 2 tablespoons baking powder
  • 1 cup icing sugar, 100 grams
  • 1 tablespoon salt, 5 grams
  • 2/3 cups vegetable shortening, cut into cubes, 125 grams
  • 2/3 cups butter, cut into cubes, 125 grams
  • 1/2 cups cream cheese, 100 grams
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 1 cup cow's milk, 250 milliliters

  • Preheat the oven to 170°C.
  • On a clean surface, form a volcano with the flour and place the dry yeast, baking powder, powdered sugar, and salt. Mix very well and add the butter, lard, and cream cheese. With the help of a scraper, work to break down the lard and butter until you reach a sandy consistency.
  • Add the eggs and milk one by one, mixing without over-kneading, just until the ingredients are combined so that the dough is not elastic.
  • Wrap the dough in cling film and refrigerate for 30 minutes before using it, so you can handle it.
  • On a floured surface, roll out the dough into a rectangle. Mark the surface with your fingers and fold it like a book. Let it rest for 3 minutes and with the help of a rolling pin, roll it out again until it reaches a thickness of 5 mm.
  • With the help of a round cutter of 8 cm in diameter, cut the biscuits and place them on a previously greased and floured baking tray.
  • With a smaller round cutter, mark the center of the biscuits to give them the traditional shape. Brush them with egg yolk and let them ferment for 20 minutes.
  • Brush the surface of the biscuits again and bake for about 15 minutes or until they are cooked. Cool and serve with jams.
