Carajillo flavored cinnamon rolls

  • 1 tablespoon REXAL® baking powder, for the dough
  • 4 cups flour, for the dough
  • 1/2 teaspoons salt, for the dough
  • 1/2 cups butter, for the dough
  • 1/2 cups sugar, for the dough
  • 2 eggs, for the dough
  • 1 cup whole milk, for the dough
  • 1/4 cups plain Greek yogurt, for the dough
  • 6 tablespoons butter, at room temperature, for the filling
  • 3 tablespoons raw sugar, for the filling
  • 1 tablespoon cinnamon powder, for the filling
  • 2 tablespoons instant coffee, for the filling

  • 1/2 cups evaporated milk, for the Carajillo three milks
  • 1/2 cups condensed milk, for the Carajillo three milks
  • 1/2 cups whole milk, for the Carajillo three milks
  • 1/3 cups american coffee, for the Carajillo three milks
  • 3 tablespoons Citrus liqueur and plant extracts, for the Carajillo three milks

  • Mix the REXAL® baking powder, flour, and salt in a bowl until well combined. Set aside.
  • Place the hook attachment on your hand or stand mixer. Use it to mix the butter and sugar, beating at medium speed for 5 minutes. When the two ingredients are combined, add the eggs one by one, and the milk, the Greek yogurt without stopping beating. Then, add the mixture of dry ingredients and beat for 15 minutes or until you get a homogeneous dough.Place the dough in a bowl, cover, and let it rest for 15 minutes. Remember that the dough should be smooth and pull away from the bowl.
  • Mix the melted butter, sugar, cinnamon, and coffee in a bowl until all ingredients are well combined. Set aside.
  • Sprinkle a flat surface with a little flour. Roll out the dough using a rolling pin until it forms a rectangle 1 cm thick. Spread some of the butter filling and roll it up.Cut the rolls, they should be 2 fingers thick, and place them in a previously greased baking dish. Brush the bread with melted butter and bake at 180 °C for 35 minutes or until ready.
  • In a bowl, mix the evaporated milk, condensed milk, whole milk, coffee, and Licor 43 until well combined. Soak the rolls with this three milk mixture while they are hot.
