Chocolate Berlines

This recipe is perfect for a cold day; enjoy some warm berlines in the evening or for breakfast. They are simply delicious and the best companion for your favorite hot drink.

  • 1 kilo flour 1 kilo flour
  • 100 grams margarine

  • 5 milliliters vanilla essence 5 milliliters vanilla essence
  • 1 liter vegetable oil, for frying 1 liter vegetable oil, for frying
  • pastry cream, for filling

  • Incorporate the flour into the mixing bowl.
  • Mix for 1 minute at low speed to aerate the flour.
  • Add the dry ingredients.
  • Add the water, eggs, and fat.
  • Start kneading at high speed and add the fresh yeast.
  • Knead for 8 to 10 minutes until a smooth and elastic dough is achieved.
  • Cut and roll pieces of 80 grams.
  • Let rest on cloths or floured fabric, or cover with plastic for 15 minutes.
  • Gently flatten the surface and let ferment for approximately 30 minutes in a fermentation chamber or cover with plastic.
  • 5 minutes before frying, remove from the refrigerator or plastic to form a small crust.
  • Fry at 180°C for approximately 3 minutes on each side.
  • Cool, cut almost in half with scissors or a serrated knife, and fill with pastry cream or jam and/or sprinkle with sugar on the surface.
