  • 1/2 cups milk, warm
  • 1 tablespoon sugar
  • 9 grams dry yeast
  • 3 cups flour
  • 1/4 cups sugar
  • 3/4 teaspoons salt
  • 3 San Juan® eggs
  • 1/3 cups butter

  • In a bowl, mix the warm milk, sugar, and dry yeast. Let it rest for 10 minutes and set aside.
  • Place the hook attachment on the mixer. Mix the flour, sugar, salt, egg, and yeast mixture and knead for 10 minutes or until you obtain a smooth and elastic dough.Add the butter and continue kneading for another 10 minutes. Place the dough in a greased bowl, cover, and let it rest for 30 minutes or until it doubles in size.
  • Flour a flat surface. Place the dough, punch it down, and roll it out lengthwise. Then, cut strips horizontally until reaching the middle.Place the chocolate at the flat end and roll it up, but the last thing you will wrap will be the strips. Seal with the same dough to form the ring.
  • Transfer the chocolate-filled brioche ring to a baking sheet lined with parchment paper. Brush with egg and sprinkle with sugar, then bake at 180 °C for 25 minutes.
