Chocolate Conchas

Conchas are one of the most popular varieties of sweet bread in Mexico, characterized by being very fluffy and sweet, perfect to accompany with a glass of milk or coffee! This time, we share this recipe for chocolate conchas with the unique flavor of Conejos®, you won’t be able to stop eating them!

  • 1/2 kilos flour, for the dough
  • 1 teaspoon salt, for the dough
  • 1/2 cups sugar, for the dough
  • 1 tablespoon dry yeast, for the dough
  • 4 eggs, for the dough
  • 1/2 cups water, for the dough
  • 1/2 cups butter, for the dough
  • 1/2 cups butter, for the topping
  • 1/2 cups icing sugar, for the topping
  • 1/2 cups flour, for the topping
  • 1/2 tablespoons vanilla essence, for the topping
  • 1/2 cups whipping cream, for the ganache
  • 4 Rabbits®, for the ganache
  • 1 teaspoon butter, for the ganache

Low
  • Place the flour, salt, sugar, and baking powder in a bowl. Mix well, then add the egg and water. Knead for 5 minutes or until you obtain an elastic dough.
  • Add the butter and continue kneading for 15 minutes or until the dough is smooth and soft. Place the dough in a lightly greased bowl and let it rest for 30 minutes or until it doubles in size.
  • For the topping: Beat the butter, powdered sugar, flour, and vanilla extract until you obtain a dough that does not stick. Reserve.
  • Once the dough for the conchas is ready, punch it down, form balls of approximately 70 g, place them on a baking tray and gently press down on the edges. Then, cover with the topping and let rest for another 15 minutes.
  • Bake the chocolate conchas at 180 °C for 20 minutes or until well cooked.
  • For the ganache: Heat the heavy cream, pour it into a bowl with the Conejos®, cover, and let it rest for a few minutes. Then, mix until melted, add the butter, combine, cover, and let it rest.
  • Cut the conchas in half, fill with chocolate ganache, close, place a Conejo® on top, and decorate with more grated chocolate.
