In a deep bowl, dissolve the yeast in 1/4 cup of warm water.
Add half of the flour and knead to make a dough ball. Place on a plate and cover with plastic wrap to let it rest until it has doubled in size.
In a large bowl, mix the remaining flour, the eggs, the orange essence, the yolks, the melted butter, the sugar, and the salt.
Add the sourdough (the one with the yeast) and mix until you have an even dough.
Let the dough ball rest on a platter covered for 6 hours at room temperature.
Preheat the oven to 180 degrees Celsius.
Take the dough and make two rings. Place each ring on a large baking sheet. The figurines are placed in the rings without leaving a trace of where they are located.
Bake the ring for 15-20 minutes.
Remove from the oven and decorate with the candied fruits.
