King Cake

A very delicious recipe to make a traditional king cake for the Three Kings.

  • 400 grams flour
  • 15 grams yeast
  • 200 grams butter, melted
  • 100 grams sugar
  • 7 egg yolks
  • 3 eggs, whole
  • 1/4 teaspoons salt
  • 1 cup caramelized fruit, in strips for decoration
  • 1 tablespoon orange essence

  • In a deep bowl, dissolve the yeast in 1/4 cup of warm water.
  • Add half of the flour and knead to make a dough ball. Place on a plate and cover with plastic wrap to let it rest until it has doubled in size.
  • In a large bowl, mix the remaining flour, the eggs, the orange essence, the yolks, the melted butter, the sugar, and the salt.
  • Add the sourdough (the one with the yeast) and mix until you have an even dough.
  • Let the dough ball rest on a platter covered for 6 hours at room temperature.
  • Preheat the oven to 180 degrees Celsius.
  • Take the dough and make two rings. Place each ring on a large baking sheet. The figurines are placed in the rings without leaving a trace of where they are located.
  • Bake the ring for 15-20 minutes.
  • Remove from the oven and decorate with the candied fruits.
