Heat a spoonful of olive oil in a skillet. Add the onion and sauté until it becomes more transparent. Then remove from heat, add the diced tomato, and season to taste with salt and pepper.
Cut the bread into slices and make bread circles.
Roll out the bread circles a little with a rolling pin and then place them in a muffin tin. Drizzle them with a few drops of oil and bake for approximately three minutes.
Beat the eggs together with the milk, parsley, salt, and pepper.
Place the onion and tomato mixture in each mold. Add a tablespoon of grated cheese to each one and finish with two and a half tablespoons of the egg mixture. Place everything immediately in the oven and cook for approximately 15 minutes until the filling is firm and golden.
Let cool and serve with a little fresh parsley on top.
