Mini Quiches

An ideal option if you have leftover bread from the previous day, to make a tasty and healthy snack or side dish, this recipe is very easy to prepare, and I assure you that your guests will love it.

  • 1 tomato, diced
  • 1/4 onions, finely chopped
  • 1 tablespoon olive oil

  • 2/3 cups cow's milk
  • 1/3 cups cheese, grated
  • 2 sprigs parsley

  • Preheat the oven to 180º C.
  • Heat a spoonful of olive oil in a skillet. Add the onion and sauté until it becomes more transparent. Then remove from heat, add the diced tomato, and season to taste with salt and pepper.
  • Cut the bread into slices and make bread circles.
  • Roll out the bread circles a little with a rolling pin and then place them in a muffin tin. Drizzle them with a few drops of oil and bake for approximately three minutes.
  • Beat the eggs together with the milk, parsley, salt, and pepper.
  • Place the onion and tomato mixture in each mold. Add a tablespoon of grated cheese to each one and finish with two and a half tablespoons of the egg mixture. Place everything immediately in the oven and cook for approximately 15 minutes until the filling is firm and golden.
  • Let cool and serve with a little fresh parsley on top.
