180 grams flour
1 sachet yeast
3 eggs
150 grams Emmental cheese, grated
10 milliliters extra virgin olive oil
10 milliliters cow's milk
100 grams bacon
100 grams green olives, boneless, drained, washed, and cut into small pieces
100 grams black olives, boneless, drained, washed, and cut into small pieces
ground peppers, to taste
1 pinch salt
butter cooking spray, as needed

Preheat the oven to 180° C.
In a skillet, brown the strips of bacon. Once ready, place them on a plate with paper towels to absorb the excess fat.
In a bowl, mix the flour with the baking powder.
In another bowl, beat the eggs, and add the milk, olive oil, salt, and pepper.
Once these ingredients are well mixed, gradually add them to the flour, stirring well to avoid lumps until the mixture is smooth.
Once the mixture is ready, add the grated cheese, bacon, and olives.
Grease a cake pan with cooking spray. Carefully pour in the mixture.
Bake for 45-50 minutes. You will confirm that the cake is ready when a toothpick or knife comes out clean when inserted.
When it’s ready, take it out of the oven, let it cool, and unmold. Serve it cut into pieces, and if it’s for an appetizer, cut into small squares.
