Onion Bread

  • 2 eggs
  • 1/2 bolillo rolls
  • 1/2 cups cow's milk
  • 1 tablespoon parsley , chopped
  • 1/2 onions, chopped
  • 3 tablespoons oil
  • 1 lemon
  • salt
  • pepper
  • 1/2 sticks unsalted butter

  • Soak the bolillo in milk, and once it has absorbed the milk, squeeze it out.
  • Sauté the onion in a skillet with melted butter.
  • In a bowl, combine the soaked and squeezed bread with the onion.
  • Add the chopped parsley, lemon juice, salt and pepper, oil, and the two egg yolks.
  • In a separate bowl, beat the 2 egg whites until stiff peaks form and fold them into the mixture to combine.
  • Grease a baking dish with butter and sprinkle a bit of breadcrumbs.
  • Pour the mixture, sprinkle some breadcrumbs on top, and bake in the oven at 180 degrees for about 45 minutes.
  • Insert the tip of a knife, and if it comes out clean, it is ready.
