125 grams unsalted butter
250 grams flour
5 grams salt
1 pinch sugar
90 milliliters water
100 grams Parmesan cheese
1/4 bunches fresh thyme
5 tomatoes, roasted and crushed

Oven preheated to 210° C
Mix the butter (you can substitute with any fat you prefer) with the flour and rub with your hands until it forms a sandy texture.
Form a volcano with the previous mixture and incorporate the salt and sugar.
Add the water and mix lightly until fully combined.
Wrap the dough in cling film and refrigerate for 30 minutes.
Cut the dough into sticks of 3 cm x 10 cm, sprinkle with parmesan cheese and a little thyme.
Bake at 210° C for 5 minutes.
Serve with the roasted and crushed tomato.
