Pastis Landais

  • 350 grams wheat flour
  • 3 eggs
  • 80 grams butter
  • 120 grams sugar
  • 1/2 glasses cow's milk
  • 10 grams baker's yeast
  • 1 teaspoon vanilla essence
  • 1 teaspoon anise, pastis or rum, to taste
  • 1 tablespoon orange essence, (orange blossom)
  • 2 pinches salt

  • Prepare a dough with the yeast in a little warm milk, 1 egg, a pinch of salt, 100 g of flour, and let it rise for 1 to 2 hours.
  • In a deep bowl, beat the 2 remaining eggs and add the sugar, a pinch of salt, the melted butter, the milk, the stale bread, the essence, and the rest of the flour
  • Knead until the mixture is smooth and not sticky.
  • Place the mixture in a buttered mold, let it rest in a warm place for 6 hours.
  • Bake for 30 minutes at moderate heat, approximately 100°C.
