Pumpkin Bread

This delicious bread is perfect for chilly autumn days and for using up pumpkins after celebrating Halloween. It tastes great spread with butter or cream cheese.

  • 1 1/2 cups flour
  • 1/2 teaspoons salt
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 cup pumpkin purée
  • 1/2 cups vegetable oil
  • 2 eggs, blended
  • 1/4 cups water
  • 1/4 teaspoons nutmeg
  • 1 teaspoon cinnamon
  • 1/4 teaspoons clove, ground
  • 1/4 teaspoons pepper, allspice
  • 1/2 cups walnuts, chopped

  • Preheat the oven to 350 °F.
  • Grease a loaf pan. Sift the flour, salt, sugar, and baking soda together. In a separate bowl, combine the pumpkin, oil, water, eggs, and spices. Fold in with the dry ingredients and mix until everything is well combined without overmixing. Add the chopped nuts.
  • Pour into the loaf pan and bake in the oven for about 50-60 mins. or until a toothpick inserted comes out clean. Remove the bread from the pan and allow it to cool. It keeps well in the refrigerator when covered.
