This delicious bread is perfect for chilly autumn days and for using up pumpkins after celebrating Halloween. It tastes great spread with butter or cream cheese.
Grease a loaf pan. Sift the flour, salt, sugar, and baking soda together. In a separate bowl, combine the pumpkin, oil, water, eggs, and spices. Fold in with the dry ingredients and mix until everything is well combined without overmixing. Add the chopped nuts.
Pour into the loaf pan and bake in the oven for about 50-60 mins. or until a toothpick inserted comes out clean. Remove the bread from the pan and allow it to cool. It keeps well in the refrigerator when covered.
