This version of the traditional Rosca de Reyes is perfect if you run out of flour or want to give a different flavor to the bread. Use hot cake flour instead of regular flour and enjoy a new way to eat this delicious bread.
Dissolve 12 grams of fresh yeast in 120 milliliters of milk.
Mix on a clean, flat surface 1.300 or 1.500 kg of Gamesa® Hot Cake Flour with 100 grams of sugar.
Add 3 eggs and mix with your hands until everything is combined. Add 5 ml of vanilla extract.
Add milk with yeast, 200 grams of softened butter, the zest of 1 orange, and 1 lemon. If necessary, add more flour until the dough no longer sticks.
Preheat the oven to 180°C. Meanwhile, place a bit of oil in a bowl and add the dough. Cover with a cloth and let it rest for 30 minutes until it doubles in size.
Shape the dough into a ring with your hands. Insert as many little figures as you want.
For the sugar topping: Mix 50 grams of butter, 50 grams of sugar, 50 grams of flour, and 10 grams of egg. Place the mixture in a piping bag.
Decorate the ring with the mixture, nuts, and candied cherries. Glaze with a beaten egg and sprinkle brown sugar over the strips formed with the sugar mixture.
Bake for approximately 30 minutes at 180°C.
