Tricolor Fritters

Enjoy this recipe where we tell you how to make wind fritters. We made them with a mold and with original colors that you can use for National Holidays or Christmas. The origin of the fritters is uncertain; they were previously called puñuelos, as the shape was made with fists. What is known is that this dessert arrived in Mexico due to the Conquest and transformed with the use of Mexican ingredients.

  • 1 1/4 cups flour
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoons salt
  • 1/4 teaspoons baking powder
  • 1 teaspoon vanilla essence
  • 1 tablespoon water
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1 cup cow's milk
  • food coloring, green and red
  • vegetable oil, for frying
  • 1 cup sugar, for sprinkling
  • 1 teaspoon cinnamon powder

  • For the fritters, in a bowl mix the flour with the sugar, salt, baking powder, vanilla, water, oil, egg, and milk until obtaining a homogeneous and light dough.
  • Divide the mixture into 3, dye one red, another green with vegetable dye, and leave one uncolored.
  • Heat enough oil in two pots and immerse the fritter mold in one of them until it gets very hot. Remove the excess and quickly dip the mold into the fritter mixture. Introduce it into the other pot with oil, fry, and gently shake to let the fritter fall, cook until lightly golden, and drain on absorbent paper. Repeat with all the mixtures until finished.
  • Combine the sugar with the cinnamon in a bowl and sprinkle the still hot fritters with this mixture.
  • Serve and enjoy.
