Vegan Bread of the Dead

The bread of the dead is a whole tradition in Mexico, where it is prepared to adorn the offerings for the Day of the Dead, but also to enjoy with family.   • 4 cups flour, 1 kg
  • 3 tablespoons dry yeast, 15 g
  • 4 tablespoons flaxseed, ground
  • 1 teaspoon salt
  • 1 1/2 cups Silk® Oatmeal Sugar Free / Unsweetened
  • 1 1/4 cups sugar
  • 200 grams vegetable shortening
  • 1 tablespoon orange zest
  • flour, to form the bread
  • water, mixed with sugar and salt, for glazing
  • 1 teaspoon orange blossom essence
  • vegetable shortening, melted, for glazing the bread
  • sugar, to decorate the bread of the dead

  • Mix the flour, baking powder, flaxseed, and salt on a clean surface. Next, slowly add Silk® Unsweetened Oat Milk; do the same with the sugar and knead. Finally, incorporate the vegetable shortening and knead until you achieve a smooth and soft texture. Add the orange zest and finish kneading. Reserve.
  • Transfer the bread of the dead dough to a bowl and cover with plastic wrap. Let it ferment in a warm place for about 30 minutes.
  • After this time, punch down the dough and divide it into pieces of 80 g. Reserve a bit of the dough to form the bones.
  • Form small balls with the pieces you cut and cover them with a damp cloth.
  • While the small balls rest, shape the bones. For this, add a bit of flour to the reserved dough and form the bones and the little heads of the bread of the dead. Place them on top of the small balls, press down with the palm of your hand in the center, cover again, and let them rest to ferment for 10 minutes.
  • Glaze the bread with the mixture of water, sugar, salt, and orange blossom essence. Bake the vegan bread of the dead at 180 °C for 25 minutes.
  • Once the bread of the dead is ready, remove it from the oven. While it is still hot, glaze with the shortening, sprinkle with sugar, and decorate with marigold petals.
