Dissolve the milk, sugar, and salt in a bowl. Set aside.
With the help of a mixer, mix the flour with the yeast until combined. Add the butter and mix for 10 minutes, then add the eggs and gradually the milk, mixing for 15 minutes until your dough separates from the bowl.
Grease a bowl with a little vegetable oil, place the dough inside and let it rise for 1 hour or until it doubles in volume.
Roll out the dough on a previously floured surface until you get a large rectangle 3 mm thick, use a knife to shape it into a rectangle.
On the rectangle, distribute the bacon and ham covering ¾ of the rectangle, form a line with the olives and raisins.
From the remaining part of the rectangle, cut thin strips that will be used for decorating the roll as shown in the video.
Roll the dough starting with the olives, finishing with the strips to cover them.
Mix the piloncillo and the egg, brush the roll and let it rise for 30 minutes. Bake for 45 minutes at 180° C.
Remove from the oven, place on a board and cut into slices. Serve the roll and accompany it with a delicious salad.
