Whole Wheat Bread with Granola

  • 1/4 cups water
  • 1/4 cups water, warm
  • 1 cup milk, warm
  • 15 grams yeast, powder
  • 2 tablespoons honey
  • 3 3/4 cups whole-wheat flour
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 1 egg
  • 1 1/2 cups Granola with Fruits Granvita®
  • 3 tablespoons water, for fermenting

  • Hydrate the Granvita® Whole Oats with water for about 10 minutes. Set aside.
  • Mix the warm water with the warm milk, yeast, and honey in a bowl, combining until you achieve a uniform texture. Let it rest at room temperature; you will notice how the yeast begins to activate and form small bubbles, indicating that the dough is ready. Set aside.
  • Pour the whole wheat flour along with the salt and hydrated Granvita® Whole Oats into a bowl, then add the olive oil and the egg, gradually incorporating the activated yeast while stirring. Add half a cup of Granvita® Fruit Granola; you should obtain a homogeneous and flexible mixture. Transfer the dough to a floured surface with enough whole wheat flour and knead for 10 minutes or until you achieve a manageable and slightly tight mixture.
  • Place the mixture in a previously greased and floured loaf pan. First, form a ball with the dough and flatten it with the palms of your hands to create a rectangle half a centimeter thick. Roll the dough 3 times, pressing with the tips of your fingers to tightly secure the dough at the edge; you will notice how a wide roll forms. Tuck the ends down under the roll and place the whole wheat dough (remember to place the seam side down) inside the pan. Brush the surface with water and let it ferment (rest) in a warm place until it doubles in size.
  • Preheat the oven to 180 °C.
  • Once the dough has doubled in size, brush the surface with maple syrup and add the remaining Granvita® Fruit Granola, making sure to cover the entire surface. Bake at 180 °C for 40 to 45 minutes, remove from the oven, let cool, unmold, and serve.
