Asparagus and Smoked Salmon Frittata

Frittatas are perfect for a large breakfast or a Sunday meal. They are easy to cook and very nutritious.

  • 1 tablespoon olive oil
  • 1 1/2 cups asparagus, cut into pieces
  • 1/4 cups water
  • 1/8 cups chives, chopped
  • 1/2 teaspoons black pepper
  • 4 eggs
  • 1 tablespoon fresh dill, chopped
  • 4 slices smoked salmon, cut into strips
  • 1/4 cups goat cheese

  • Heat a skillet that you can also use in the oven over medium heat. Add the olive oil and cook the asparagus for 30 seconds. Add 1 tablespoon of water, cover, and cook for 3 minutes.
  • Add the scallions and pepper and mix. Remove from heat.
  • Preheat your oven to broiler and place the rack in the upper third.
  • Whisk the eggs with 3 tablespoons of water and the dill. Pour the eggs over the asparagus and cook over medium heat for 2 minutes. Cover the eggs with the strips of salmon and cheese. Cook for 5 more minutes.
  • Place the skillet under the broiler and cook for 2 minutes or until the frittata is lightly browned. Remove from the oven and serve.
